Add greater flexibility for the client to gray out, hide, or otherwise block unused fields

There are plenty of fields that we are not likely to ever use in VIP. All those unused fields can add significant complexity for new users. Allowing the client to gray out, hide, or otherwise block fields that are not being used would significantly boost the user experience, streamline the interface, and make the interface/workflow much more intuitive for new and existing users.

Further to this, in the November 2019 ONCOURSE, one of the topics of conversation was around a customisable UI. There hasn't been much talk since then on this.
